Ingredients

  • 1 yellow onion, finely chopped
  • 1 lb (450g) ground beef
  • 1 cup (140g) frozen peas
  • 1 medium carrot, diced
  • 3 medium potatoes, peeled and diced
  • 1 tablespoon olive oil (or your preferred cooking oil)
  • 2 cloves garlic, minced
  • 1 cup beef broth (or water with 1 teaspoon bouillon powder)
  • 1/4 cup tomato paste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Step 1: Prepare the Potatoes

  1. Bring a pot of salted water to a boil. Add the diced potatoes and cook for 8–10 minutes or until tender. Drain and set aside.

Step 2: Cook the Beef

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Add the onion and garlic, and sauté for 2–3 minutes until fragrant.
  3. Add the ground beef to the skillet. Cook, breaking it apart with a spoon, until browned and fully cooked. Drain any excess fat.
