Recipe for Healthy Carrot Cake Snack Balls


 

Get the carrots ready.


Put the chopped carrot in a food processor. Blend until finely chopped. Move the shredded carrot to a bowl and leave it there.




Mix the main ingredients together.


In the same blender, mix together the oats, dates, and pecans. Press the button until the mixture becomes finely ground and begins to stick together.




Add the seasonings:


Put the grated carrot, 1/2 cup of shredded coconut, vanilla extract, cinnamon, ginger, and nutmeg in the food processor.


Keep blending until the mixture is thoroughly mixed and turns into a sticky dough.




Form the Energy Bites:


Take a little bit of the dough and shape it into small balls using your hands.


Roll each ball in the rest of the shredded coconut to cover the outside.




Relax and Enjoy:


Put the energy bites on a plate or tray and place them in the refrigerator for at least 30 minutes to make them firmer.


Once they have been cooled, you can eat the Carrot Cake Energy Bites!
