Nougat with Almonds, Walnuts, and Cranberries 🍬✨

Ingredients

  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 2 large egg whites
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup almonds, toasted
  • 1 cup walnuts, chopped and toasted
  • 1/2 cup dried cranberries
  • Edible wafer paper (optional, for lining)

Instructions

Step 1: Prepare the Nuts and Pan

  1. Toast the almonds and walnuts in a dry skillet over medium heat for 3–5 minutes, or until fragrant. Set aside to cool.
  2. Line a 9x9-inch pan with parchment paper or edible wafer paper.

Step 2: Make the Sugar Syrup

  1. In a heavy-bottomed saucepan, combine the sugar, corn syrup, and water.
  2. Cook over medium heat, stirring until the sugar dissolves. Increase the heat to medium-high and bring to a boil. Do not stir.
  3. Use a candy thermometer and heat the mixture to 250°F (120°C) (hard-ball stage).
