Pierce potatoes with a fork, rub with oil, and bake 45-50 mins until tender.
Let cool slightly, then slice in half and scoop out most of the flesh (leave ~¼-inch border).

Brush insides with olive oil, season with salt, and bake 10 mins (cut-side up) until crispy.

Sauté mushrooms in oil until golden, then add garlic + spinach until wilted.

4️⃣ Stuff & Bake Again
Fill skins with spinach-mushroom mixture.
Bake 8-10 mins until heated through.
5️⃣ Make the Dip & Serve
Stir together all dip ingredients.
