Ingredients
- 2 cups sweetened shredded coconut
- 1/2 cup granulated sugar
- 2 large egg whites
- 1 teaspoon vanilla extract

- Optional: 1/4 cup chocolate chips or drizzle for topping
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper or a silicone baking mat.
Step 2: Mix the Ingredients
- In a large mixing bowl, combine the shredded coconut, sugar, egg whites, vanilla extract, and salt.
- Mix until the ingredients are fully combined and the coconut is evenly coated.
Step 3: Shape the Chewies
- Using a tablespoon or a small cookie scoop, scoop the mixture onto the prepared baking sheet.
- Gently press the scoops into mounds or flatten slightly for a crispier edge.
Step 4: Bake
- Bake for 12–15 minutes, or until the edges are golden brown and the tops are slightly toasted.
Step 5: Cool and Serve
- Remove the baking sheet from the oven and let the chewies cool on the tray for a few minutes.
- Transfer to a wire rack to cool completely.
