Ingredients

  • 2 cups sweetened shredded coconut
  • 1/2 cup granulated sugar
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: 1/4 cup chocolate chips or drizzle for topping

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper or a silicone baking mat.

Step 2: Mix the Ingredients

  1. In a large mixing bowl, combine the shredded coconut, sugar, egg whites, vanilla extract, and salt.
  2. Mix until the ingredients are fully combined and the coconut is evenly coated.

Step 3: Shape the Chewies

  1. Using a tablespoon or a small cookie scoop, scoop the mixture onto the prepared baking sheet.
  2. Gently press the scoops into mounds or flatten slightly for a crispier edge.

Step 4: Bake

  1. Bake for 12–15 minutes, or until the edges are golden brown and the tops are slightly toasted.

Step 5: Cool and Serve

  1. Remove the baking sheet from the oven and let the chewies cool on the tray for a few minutes.
  2. Transfer to a wire rack to cool completely.

Optional: Add Chocolate
