Warm up olive oil in a big pot on medium heat. Put the Italian sausage in the pan and cook it, stirring and breaking it into pieces until it is browned and cooked through. Get rid of extra grease if needed.
Put the diced onion in the pan and cook for 3-4 minutes until it is soft and see-through. Add the garlic and cook for one more minute until it smells good.
Add the chicken broth and chopped tomatoes. Heat until boiling, then lower the heat and let it cook gently for around 10 minutes.
Add the heavy cream, Italian herbs, salt, and pepper. Put the tortellini in the pot and cook for 7-9 minutes until they are soft.
Put the spinach in and mix it until it shrinks. Try the food and add more salt or other seasonings if needed.
Serve the dish hot and sprinkle with freshly grated Parmesan cheese if you like.
