Soup with potatoes, broccoli, and cheddar cheese cooked in a slow cooker.



Put ingredients in the slow cooker.
Put the broccoli pieces, chopped potatoes, onion, garlic, broth, thyme, salt, and pepper in the slow cooker.

Prepare the soup broth.
Place the lid on and cook on low heat for 6 to 7 hours or on high heat for 3 to 4 hours, until the potatoes and broccoli are soft.

Mix the soup (if desired).
Use a hand blender to mix the soup until it reaches the texture you prefer, either smooth or with small pieces. You can also put half of the soup in a blender, blend it until it's smooth, and then put it back in the pot to make it thicker.

Include cream and cheese.
Add the heavy cream or milk and grated cheddar cheese. Keep cooking on low heat for 10 to 15 minutes, stirring from time to time, until the cheese is melted and the soup becomes creamy.

Serve and Decorate:
Put the soup in bowls and add chopped chives or parsley on top, if you like.
