Recipe for Mushroom Soup


 

Cook the chopped vegetables in hot oil.

Warm the butter and olive oil in a big pot on medium heat. Put the diced onion in the pan and cook until it becomes soft, which should take around 4-5 minutes. Add the chopped garlic and cook for one more minute.
Prepare the mushrooms for cooking.

Put the cut mushrooms in the pot. Cook for 8-10 minutes, stirring from time to time, until the mushrooms let out their liquid and start to turn golden.
Put in the flour.

Put the flour on top of the mushrooms and mix them together until they are well covered. Cook for 1-2 minutes to get rid of the taste of raw flour.
Create the soup base.

Slowly pour the chicken or vegetable broth while stirring to prevent clumps from forming. Put the dried thyme in and let the mixture simmer gently. Let it cook for 10-12 minutes so the flavors can mix together.
Mix the soup (if desired).

To make a creamy soup, use a hand blender in the pot or blend the soup in parts in a regular blender. To make a thicker soup, blend only half of it and keep the other half as it is.
Put on the cream.

Lower the heat and mix in the heavy cream and milk. Warm the mixture slowly without bringing it to a boil, and add salt and pepper to your liking.
Wait on customers.

Put the soup in bowls and add fresh parsley, cooked mushrooms, or a little cream on top to make it look nice. Enjoy it hot with crunchy bread or crackers.

To make it more interesting, use a variety of mushrooms such as shiitake, oyster, and cremini.
Use coconut milk instead of heavy cream for a version without dairy.
