Recipe for making a soup similar to Olive Garden's Chicken Gnocchi Soup.


 

Prepare the chicken.


If you begin with fresh chicken, cook it in a pan or bake it until it is completely cooked. Cut into small pieces and put to the side. You can also use pre-cooked chicken for convenience.

Cook the vegetables in a pan with a little oil.


In a big pot, warm up the butter and olive oil on medium heat. Put in the onion, celery, and garlic. Cook over medium heat for 3-4 minutes, until the onion becomes see-through and smells good.

Make the soup broth.


Put the flour on top of the cooked vegetables. Mix thoroughly and cook for 1-2 minutes to get rid of the raw flour flavor.

Slowly add the chicken broth while stirring constantly to avoid clumps. Put in equal parts of milk and cream, thyme, parsley, salt, and pepper. Heat gently until it starts to simmer.

Include carrots and chicken.


Mix the chopped chicken and carrots. Let the soup cook gently for around 5 minutes so the flavors can mix well.

Make the Gnocchi:


Put the gnocchi in the soup. Cook for 3-5 minutes until the gnocchi rise to the surface, showing they are done.

Include spinach.


Add the baby spinach and cook for 1-2 minutes until it wilts.

Last step:


Try the soup and add more seasonings if necessary. If you want, mix in some grated Parmesan cheese to make it richer.

Put the soup in bowls and add more Parmesan cheese, fresh parsley, or cracked black pepper on top.
