Mushroom Soup with a Smooth Texture


 


List of items needed:

2 tablespoons of butter
1 little onion, chopped
1 spoon of olive oil
1 pound of mushrooms (like cremini, button, or portobello), cut into slices.
2 pieces of garlic, finely chopped
1 teaspoon of thyme leaves, either fresh or 1/2 teaspoon of dried thyme.
Add salt and pepper according to your preference.
3 cups of vegetable or chicken broth
1 cup of thick cream or half cream
1 spoon of all-purpose flour (you can use it to make the mixture thicker).
Fresh parsley, finely chopped, to decorate (if desired)
