Creamy Soup with Parmesan Cheese, Italian Sausage, and Small Pasta


 

In a big pot, warm up olive oil on medium heat. Put the Italian sausage in the pan, breaking it into small pieces, and cook until it turns brown. Take the sausage out of the pot and place it to the side.
Cook the vegetables in a pan with a little oil.
In the same pot, put chopped onion, crushed garlic, sliced carrots, and chopped celery. Cook the vegetables until they are soft, for about 5 minutes.
Include broth and herbs.
Add the chicken broth and mix in the oregano and basil. Heat the mixture until it starts bubbling.

Put the small pasta into the hot broth. Cook for around 8 minutes, or until the pasta is soft but still a bit firm.

Reduce the temperature to medium. Mix the cooked sausage with the cream and grated Parmesan cheese. Let the soup cook gently for 5 minutes until it thickens a bit.
Include spinach.
Add the fresh spinach and cook it until it shrinks in the soup. Add salt and pepper to your liking.
Serve and decorate:
Put the soup in bowls, add some fresh parsley on top, and enjoy it while it's warm!
