  • 2 teaspoons vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 1 teaspoon salt

For the Chocolate Frosting

  • Pinch of salt

How to Make Lunch Lady Brownies

1. Prepare the Pan

Preheat your oven to 350°F (175°C).

Grease a 9×13-inch baking pan or line it with parchment paper, leaving a little overhang so the brownies can be lifted out easily.

2. Make the Brownie Batter

In a large bowl, whisk together the melted butter and granulated sugar until well combined.

Add the eggs one at a time, whisking after each addition. Stir in the vanilla.

Add the cocoa powder, flour, and salt. Mix just until everything is combined.

Don't overmix the batter. Once you no longer see dry streaks of flour, you're ready to go.

3. Bake

Spread the batter evenly into the prepared pan.

Bake for approximately 20–25 minutes, or until the center is set and a toothpick inserted into the middle comes out with a few moist crumbs.

Be careful not to overbake. The brownies should remain soft and fudgy rather than becoming dry.
