1. Make the Pretzel Dough

  • Dissolve yeast + sugar in warm water, let sit 5 mins until frothy.

  • Mix in flour, salt, and melted butter, knead 5-7 mins until smooth.

  • Let rise 1 hour until doubled.

2. Prepare the Beer Cheese Sauce

  • Melt butter, whisk in flour to make a roux.

  • Gradually add beer + cream, simmer until thickened.

  • Stir in cheddar, mustard, salt & pepper until smooth.

3. Assemble the Bombs

  • Roll dough into 12 balls, flatten into discs.

  • Fill each with 1 tbsp brisket + 1 tsp beer cheese, then seal tightly.

4. Boil & Bake

  • Boil water + baking soda, dip each bomb for 30 secs.
