Prepare the Kielbasa: In a big pot or a large cooking pot, melt the butter on medium heat. Put the cut kielbasa in the pan and cook for 5-7 minutes, stirring now and then, until the kielbasa turns brown. Take the kielbasa out of the pot and place it to the side.
Cook Vegetables in a Pan: Put the onions, garlic, carrots, and celery in the pot together. Cook the vegetables in a pan until they are soft and smell good, for about 5 minutes.
Include potatoes and broth. Put the chopped potatoes in the pot with the chicken broth. Heat the mixture until it boils, then lower the heat. Place a lid on the pot and cook gently for 15-20 minutes, or until the potatoes are soft.
Mix for a smooth texture (if desired). If you like your soup to be creamier, you can use a hand blender to partially blend it. You can choose to leave some pieces for texture or blend until you reach the consistency you prefer.
Include milk products and spices. Add the milk, cream, smoked paprika, thyme, salt, and pepper. Put the sausage back in the pot and let it cook for another 5-10 minutes so the flavors mix together.
Serve the soup in bowls and add fresh parsley on top. Heat it up and savor the rich, creamy taste.
