Mushroom Soup with a Smooth Texture


Cook the vegetables in a pan with a little oil.

In a big pot, heat the butter and olive oil on medium heat. Put the finely cut onion and crushed garlic. Cook for around 3 to 4 minutes until the onion is soft and see-through.
Prepare the mushrooms.

Put the sliced mushrooms in the pot and cook for 5-7 minutes, stirring occasionally, until they turn golden brown and release their juices.
Mix flour into the mixture and then proceed to cook.

Put the flour on top of the mushrooms and mix it well. Cook for 1-2 more minutes to get rid of the raw flour flavor.
Include broth and let it simmer.

Slowly add the vegetable or chicken broth while stirring. Put the thyme in and let the soup simmer gently. Let it cook for around 10-15 minutes so the flavors can mix together.
Put cream and season with spices.

Add the thick cream (or half-and-half) and let it cook for 5 more minutes. Add salt and pepper to your liking.
Mix (if desired):

To make a smoother soup, use a hand blender to blend until it's smooth. If you prefer a chunkier texture, you can leave it as is for a more homemade feel.
Provide service:

Put the soup in bowls and add fresh parsley on top if you like.
