Make the sausage.
Warm olive oil in a big pot on medium heat. Put the Italian sausage in the pan and break it into pieces while cooking until it turns brown. Take out the sausage from the pot and place it to the side.
Cook the chopped vegetables in hot oil.
Put the chopped onion and crushed garlic in the pot. Cook the onion until it becomes see-through, which should take around 3 to 4 minutes.
Include tomatoes and broth.
Add the chopped tomatoes, chicken broth, dried basil, and dried oregano. Heat the mixture until it boils.
Make the pasta.
Put the pasta in the hot broth and cook until it is firm to the bite, about 8–10 minutes.
Create a creamy texture:
Lower the temperature to medium-low. Add the heavy cream and grated Parmesan cheese, let the cheese melt and make the soup thicker.
Put the sausage back in.
Put the cooked sausage back in the pot and mix it with the soup. Add salt and pepper according to your preference.
Wait on tables.
Put the soup in bowls, add some freshly chopped parsley on top, and savor this delicious Italian-style meal!
