Chicken Soup with Hatch Chiles


 


List of ingredients:

1 pound of chicken breast without bones and skin.
2 tablespoons of olive oil
1 onion, cut into small pieces
3 pieces of garlic, finely chopped
1 can of diced green chiles (4 oz)
2 cups of fresh hatch chiles that have been roasted and chopped.
1 cup of corn kernels (fresh or frozen)
4 cups of chicken broth
1 small spoon of cumin
1/2 teaspoon of smoked paprika
Add salt and pepper according to your preference.
1/4 cup of thick cream (if desired)
Fresh cilantro, finely chopped to sprinkle on top.
Pieces of lime to serve
