Cake made with carrots, apples, oats, and topped with white chocolate and nuts.


 

Get the oats ready.

Blend the oatmeal until it becomes a fine powder. Put aside.



Mix the carrots and apples together.

Cut the carrots and apples into small pieces. Put them in a blender with 70 ml of water and blend until they are smooth.



Combine the main ingredients.

In a big bowl, mix together the ground oats, pureed carrots and apples, eggs, baking powder, vanilla, and stevia. Mix until everything is well mixed together.



Get the dried fruits ready:

Put the dried apricots and raisins in cold water for 15 minutes. After that, remove them from the water and dry them with a paper towel. Cut the dried apricots if necessary.



Mix and bake together.

Put the dried apricots and raisins in the mixture and stir thoroughly. Put olive oil on a 16 cm (6-inch) wide container, then add the mixture.

Cook in an oven that has been heated to 180°C (360°F) for 50 minutes or until a toothpick inserted in the middle comes out clean.



Make the topping:

Brown the almonds and walnuts in a pan until they turn slightly golden, then cut them with a knife.

Melt the white chocolate in a bowl over hot water, then mix in the yogurt until it's smooth.



Make the cake pretty.

After the cake has cooled a bit, spread the white chocolate and yogurt mixture on top. Put the chopped nuts on top.



Make the Vitamin Tea.

Put 2 tablespoons of the vitamin tea mix into a teapot or cup. Pour hot water over the tea and let it sit for 7-10 minutes.



Serve and enjoy:

Cut the cake and enjoy it with a hot cup of tea.
