To soften the dates, put them in a bowl and cover them with cold water. Leave them in the liquid for around 15 minutes. This will make them smoother and easier to mix, giving the natural sweetness and sticking together that our cookies require.
Cut the nuts: While the dates are getting soft in water, chop your roasted cashews, almonds, and walnuts into medium-sized pieces with a knife. This will give your cookies a nice crispy texture.

Cook the cookies in the oven that has been preheated for around 12-15 minutes, or until they turn golden brown. Watch them closely to make sure they do not bake for too long.
