Large Apple Fritters

Ingredients: 1/2 cup flour (all-purpose)
Half a cup sugar and two tsp baking powder
Half a teaspoon of salt
half a teaspoon of cinnamon
one-third cup milk
two eggs
Three tablespoons of applesauce
Two big Honey Crisp or Granny Smith apples chopped, peeled, and cored
using canola oil to fry
Regarding The Glaze
Two cups of powdered sugar
one-fourth cup milk
one-half teaspoon of vanilla
Recipe for Large Apple Fritters
Slide cooling racks over wax paper-covered baking pans. Put aside.
In a medium bowl, whisk together flour, sugar, cinnamon, baking powder, and salt.
Create a well in the middle and pour in the eggs, applesauce, and 1/3 cup milk.
Just mix to blend.
Add the apples and fold.
In a deep fryer, Dutch oven, or large cast iron pan, heat 1 ½ to 2 inches of oil to 375°F.
Spread out the batter as you drop it into the heated oil, using approximately 1/4 cup of batter each fritter.
Cook for about 2 minutes on each side, or until golden brown.
To drain, remove onto paper towels.
Prepare the Glaze

Combine 1/4 cup milk, vanilla, and confectioners' sugar in a large basin.
Coat each fritter on both sides by dipping it into the glaze and flipping it over.
Arrange to drip dry and air dry on the wire racks.
Notes: Take care not to overmix the batter since this might result in tough fritters.
