Move the chicken to one side of the pan then top the other side with beaten eggs. Cook the eggs through completely.
To the pan, toss mixed veggies; simmer until soft.
To break up any rice clusters, toss cold rice into the pan and stir-fry everything together.
Over the rice mixture, pour soy sauce and sesame oil; keep stirring-frying until everything is uniformly covered.
Taste and adjust for salt and pepper.
If desired, garnish with chopped green onions.
Present spicy and savorable.
