Oh my, my son who normally doesn't eat much went bonkers over this! Ate leftovers 3 times in a row!

 


Ingredients:


1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 (15 oz) can corn, undrained

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can kidney beans, drained and rinsed

1 (15 oz) can diced tomatoes, with juice

1 (4 oz) can green chilies

2 cups beef or chicken broth

1 packet taco seasoning (or 2 tbsp homemade blend)

1 packet ranch dressing mix (optional but adds a unique flavor)

Salt and pepper to taste

Directions:


Brown the ground meat with onion and garlic in a skillet over medium heat, then drain excess fat.

Transfer to the slow cooker.

Add corn, beans, tomatoes, green chilies, and seasoning packets.

Pour in broth and stir well.

Cook on low for 6 hours or on high for 3-4 hours.

Adjust seasoning with salt and pepper before serving.
